Larderia Fausto Guadagni Colonnata:
a special place where the tradition of curing “lardo” continues. For generations local quarrymen have handed down secret recipes and “le conche” (the marble vats used for curing the "white ham") to their sons. In 1949, Anna and Amadeo Guadagni made lardo available to the general public by opening a small rustic tavern. Colonnata remained a remote hill town village until the 1950's when asphalt roads offered entrance to tourists and soon became a halting place because of Anna's “lardo flavoured with spices and aromatic herbs” (Aronte, 30/6/1958). In 1984, their son Fausto, dedicated himself to the production of his family's lardo with the opening of the restaurant “Locandapuana” and, since July 1997, the“Larderia” where the adherence to sanitation and health regulations of the EU through the aknowledgment L 9-2258 IT has not diminished the genuineness or quality of this product which remains connected to the family's traditions.
Utmost care is taken to assure that the product is handled correctly throughout the whole production process, worked only in the cold months, to assure that the natural curing process results. Italian swine bacon and dorsal bacon, natural sea salt, fresh cloves of garlic, native rosemary, mix of whole and ground spices. Those ingredients spread over the interior of the “conca” their fragrances and antibiotic natural properties.
Then just the long seasoning that can go beyond the 24 months.
Every product is free of preserves, gluten, GMO or allergens.

procedure under the control of the Massa Carrara Health Board with the IT L 9-2258
code and since January 2004 following the regulatory of the PGI under the control
of “Agroqualità” for the Ministry for agriculture, food and forest Policy.
Since 2017 we're enlisted to export to Canada.
Fully granted traceability through the coding set on each piece. Thanks a “Clean Room” we can offer all our products presliced with a Berkel and served in trays from 70g with MAP and the spreadable “Lardo di Colonnata” in jars from 180g.
